Our History

“The greatest calamity to be fall a Colony of its size and resources in so short a space of time” struck St. Lucia on the night of the 19-20th June, 1948.  A young woman named Etaly Felix, and her two sons, who had made a home in Castries, had to find means of supporting her two sons, as a single mother. Etaly, was a chef from her native town of Lamartine, Martinique, who mastered the art of creating the finest and original Creole dishes.   She was highly recognised for her style of cuisine and as her reputation become well renowned, she catered for the country's Prime Minister and other government officials from 1946 until her retirement in 1998.  I commemorate the memory of my grandmother, Etaly Felix, through Belle Creole, whose cooking techniques and style has left us a great legacy that has become my father, Peter E Felix and my own favourite pastime!
